1) Dosa mix from Qiyuan Market 期源店 (14RMB/box)

2) 3 bunches spinach (~10 cups loose uncooked)

3) 5 Anaheim chili peppers (long green, mild)

4) 4 Cloves Garlic

5) 1 White Onion

6) Salt and Pepper to Taste

7) Garam Masala  伽兰马莎拉(综合辛香料)(Qiyuan or Sanyuanli Market)

How to 食谱:

1) Boil a large pot of water.  When water is boiling, add batches of spinach as space allows.  Remove spinach after about 2 min or until cooked through.

2) Dice onions and peppers. Make sure to remove all seeds and core from onions.

3) Saute onion and peppers on low heat until soft.

4) In food processor, combine spinach, onion, green peppers, 1 tsp salt, garlic, pepper to taste, and tablespoon of garam masala.

5) After all ingredients are blended, taste and adjust salt, pepper, and garam masala to your liking. Set aside mixture if you want hot dip or let cool in fridge for cold dip.

6) Follow directions on Dosa packet to make 8 dosas (type of Indian flatbread). Try to use as flat a pan as possible. You can tell from the picture that when the pan is imperfect, the heat is distributed unevenly and the bread will crack.  When you pour the batter, you can wait until the edges start to turn brown before flipping.

That’s it! 1 dosa is more than enough for 1 person, so you could easily feed 8 people with this as an appetizer.

Nutrition Facts 营养价值:

Dosas are gluten free! This is great if you love baked goods but not wheat-induced indigestion.  The dosa ingredients are simple, just rice flour, black lentil flour, salt, and some fenugreek powder.  It’s only about 88 kCal per dosa. Here’s the nutrition label from the package:

Steamed spinach, raw garlic, peppers, and onion are of course full of healthy vitamins, minerals, and soluble fiber, and also low-cal like the dosas. It’s a delicious substitute for dairy-based or oil-based dips!
