Christmas has past, but this bright red and green dish is festive any time of year.

Ingredients:

  • vegetable oil
  • 2 packs enoki mushrooms
  • 1 inch diameter thick bunch of jie4cai4 (brassica juncea) or spinach
  • 1 red pepper
  • 1 onion
  • fresh garlic (~7 cloves according to taste)
  • 1 dried tofu block
  • 1/2 cup cooking wine
  • 1 tbsp soy sauce
  • black pepper, sugar, salt, and garlic powder to taste

Food Prep 

  1. Prepare enoki mushrooms by chopping of the bottom and rinsing
  2. Cut pepper into thin slices
  3. Chop garlic finely
  4. Cut jie4cai4 or spinach into 2 inch long pieces
  5. Cut tofu into long thin strips
  6. Chop onion into strips

Tip: Try to cut all pieces about the same length and thickness

How to:

  1. Stiry Fry garlic until slightly brown in oil, add onions
  2. When onions start to soften, add tofu, stir fry until onions are brown
  3. Add red pepper, stir-fry for 1 min
  4. Add cooking wine, a tiny bit of soy sauce, sugar, salt, garlic powder, and black pepper
  5. Add mushrooms
  6. After mushrooms soften, add the 芥菜 or spinach
  7. Cook until most of the liquid in the bottom has evaporated, enjoy!

Serves ~4 people
