Christmas has passed, but this bright red and green dish is festive any time of year…
Ingredients:
- vegetable oil
- 2 packs enoki mushrooms
- 1 inch diameter thick bunch of jie4cai4 (brassica juncea) or spinach
- 1 red pepper
- 1 onion
- fresh garlic (~7 cloves according to taste)
- 1 dried tofu block
- 1/2 cup cooking wine
- 1 tbsp soy sauce
- black pepper, sugar, salt, and garlic powder to taste
Food Prep
- Prepare enoki mushrooms by chopping of the bottom and rinsing
- Cut pepper into thin slices
- Chop garlic finely
- Cut jie4cai4 or spinach into 2 inch long pieces
- Cut tofu into long thin strips
- Chop onion into strips
Tip: Try to cut all pieces about the same length and thickness
How to:
- Stiry Fry garlic until slightly brown in oil, add onions
- When onions start to soften, add tofu, stir fry until onions are brown
- Add red pepper, stir-fry for 1 min
- Add cooking wine, a tiny bit of soy sauce, sugar, salt, garlic powder, and black pepper
- Add mushrooms
- After mushrooms soften, add the 芥菜 or spinach
- Cook until most of the liquid in the bottom has evaporated, enjoy!
Serves ~4 people
